Ultimate Stuffed Bell Pepper Recipe

There are lots of recipes for stuffed bell peppers, but the ultimate stuffed bell pepper recipe has got to be this one. Imagine a small, tender bell pepper stuffed completely with creamy cheese. You can serve these on their own for a light meal or you can make them into a creamy side dish. They go well with smoked salmon. If you use the baby bell peppers, you can make them for appetizers for a party. The baby bells were developed especially for the miniature vegetable market. They are very small and a little longer in shape than standard bell peppers. They can be great fun to work with, especially when you are making party appetizers.

There are two ways you can go with this dish: grill the peppers until the skin blisters, or take them off the heat as soon as the cheese starts to melt. You will be able to tell because the cheese will start to bubble around the top and ooze out. Either way, the peppers' sweetness is heightened by the grilling. The sweetness contrasts wonderfully with the creamy filling.

For this dish, choose yellow, red or orange peppers if you really want the sweetness. The green variety can give you a little more bitterness than its sunnier cousins. Get vine ripened peppers if you can; they are the sweetest of all. Red bell peppers are high in lycopene as well as vitamins A and C. Bell peppers are considered one of the ten most important vegetables to eat because of their nutritional value. Small Bell Peppers Stuffed with Creamy Cheese

Ingredients -

1 cup fresh ricotta
1 cup cream cheese, softened
½ cup Parmesan, grated
Salt and pepper to taste
4 small bell peppers of assorted colors
Olive oil

Preparation:

Blend the cheeses together and season them with the salt and pepper to taste.

Heat a grill or grill pan.

Remove the stems, seeds, and membranes from the peppers. Fill the peppers with the cheese mixture and reattach the tops. Rub the exterior of the peppers with olive oil. Grill until the filling is hot; approximately 7 minutes.

Note: Peppers can be stuffed ahead of time and refrigerated. Bring the peppers to room temperature before grilling.
