These deliciously piquant jalapenos are stuffed with a cheesy mixture and then wrapped in bacon. Even though it should be obvious by looking at the jalapenos that they are spicy, you might want to warn your guests in advance, just in case any of them do not want to eat spicy food. Also, keep this one away from kids, since they are even less likely to look carefully before grabbing one.
There is of course a place for spicy appetizers at a buffet and this is one of the nicest spicy appetizer recipes you can make. The piquancy of the jalapeno is one of the first things you taste when you bite down, followed by the smooth, cool cream cheese and the sweetness of the bacon. The Cajun seasoning contributes to the spicy flavor.
The bacon goes wonderfully crispy when these jalapenos are baked and the cheesy filling melts. The simple combination of cheese, bacon, and chilies is a great one and this is a brilliant appetizer to serve before a Mexican meal because it gives people a taste of what is to come. Be careful when handling jalapenos. It is best to wear gloves and not touch your eyes!
Ingredients -
16 large jalapeņos
16 slices bacon, cut in half
1 teaspoon Cajun seasoning
6 oz cream cheese, at room temperature
1 cup finely shredded cheddar
Preparation:
Preheat the oven to 350 degrees F.
Cook the bacon for 3 minutes in a skillet over a medium heat, then turn it over and cook it for another 2 minutes until it is partly cooked.
Let it cool on paper towels for 5 minutes.
Put some rubber gloves on and cut the jalapeņos in half.
Avoid touching them without the rubber gloves and when you have finished with the chili peppers, throw the gloves away and wash your hands in soapy water.
Take the white membrane and seeds out of the jalapenos and discard them.
Rinse the chilies under cold water and dry them on paper towels.
Beat the cream cheese with an electric mixer on a low speed until it is smooth, and then add the cheddar and seasoning.
Stir well.
Stir a teaspoon of cream cheese mixture into each jalapeņo, then wrap a slice of bacon around each one and secure using a toothpick.
Put the wrapped jalapeņos on a wire rack inside a shallow baking pan and bake until the bacon is crisp.
This should take about 25 minutes.
