Unforgettable Sliced Potato Appetizers

Yes, they are fried. Yes, you can serve them with dip. Yes, they are absolutely delicious. If you are health conscious, you may want to reserve these for special occasions, because they are full of calories. However, if you are looking for an unforgettable potato appetizer that will make your friends beg you for the recipe, this is what you want to serve. Chicken Fried Potatoes

Ingredients -

6 large baking potatoes
2 cups flour
½ teaspoon cayenne pepper
2 teaspoons thyme
1 teaspoon garlic powder
Salt, to taste
Black pepper, to taste
½ cup milk or 1 beaten egg
Oil for frying

Preparation:

Preheat the oven to 425 degrees Fahrenheit. Wash the potatoes and poke a few holes in the skin with a fork. You can rub olive oil on the potatoes and wrap them in foil first if you want to keep the skin softer, otherwise just pop them in the oven. Bake for about an hour. Let the potatoes cool.

Slice each potato into ¼ inch thick rounds.

Heat oil to 375 degrees Fahrenheit.

In a bowl, mix the flour, cayenne, garlic powder, thyme, salt and pepper. Pour the milk into another bowl. If you are using an egg instead, beat it well like you are making scrambled eggs.

Dip each potato round into the milk and then dredge them in the seasoned flour.

Deep fry the potato rounds in small batches to avoid overcrowding. You want them to be crisp and golden.

Drain on paper towels. Serve hot on their own or with dipping sauce of your choice.
