We all know that presentation can make a good dish great. This is already a great dish; by cutting the wing drumettes and pushing the meat towards the top, you not only get a great tasting dish, you get one that looks like it was made by a professional chef. By using the drumettes, you are getting the meatiest portion of the wing. They are easy to dip, too, if you want to serve the sesame chicken with a sweet and sour or a creamy dipping sauce. Serve this recipe for sesame chicken as appetizers or as a meal.
Of course, you can use both the meaty wing portions if you wish. They work just as well with this recipe. Just cut off the bony tips, and then divide the wing into the two meaty portions. Some people do prefer the middle section of the wing, and if you have some of these people in your family, you can please everyone.
When you fry the wings, only add a few at a time. The oil will bubble up when you add them and you do not want it to overflow. You can use a deep fryer or you can heat oil in a deep pot on the stove if you have a thermometer. Dutch ovens work well for deep frying on the stove. Watch your oil temperatures carefully so they do not drop. If you do not wait for the temperatures to come back to 375, your wings can get greasy. Keep the fried wings warm in a low oven until all of them are cooked.
Ingredients -
3 pounds chicken drumettes
¼ cup flour
½ cup cornstarch
1-¼ teaspoon salt
¼ cup sugar
1 Tablespoon sesame seeds, toasted
2 cloves garlic, minced
2 eggs, beaten
5 teaspoons soy sauce
Oil for deep frying
Preparation:
Wash and pat dry all the wings. Using a paring knife, cut around the bottom of each wing drumette through the skin and meat. Push it all towards the top of the drumette, forming a ball of meat on one end.
Mix flour, cornstarch, salt, sugar, sesame seeds, garlic, onions, eggs, and soy sauce in a bowl. Marinate the wings in this mixture for at least 3 hours; overnight works, too. The batter will be thick. As it marinates, it will thin out a bit.
Heat up your oil 375 degrees Fahrenheit. Cook your chicken wings in small batches. Deep fry until golden brown, about 8 to 10 minutes. Let them drain on paper towels.
