Ingredients -
6 cups Yukon Gold potatoes, cut into chunks
1 (12 ounce) package smoked chicken sausage, sliced
½ cup celery, finely chopped
½ cup green onion, sliced
⅓ cup Dijon mustard
1 Tablespoon fresh lemon juice
¼ teaspoon salt
¼ teaspoon black pepper
Flat leaf parsley for garnish
Preparation:
Boil the potatoes until fork tender. Drain the water. Run cold water over them to cool them off. Peel them if needed and let them chill.
Sauté the sausage for two minutes over medium high heat. Add to the potatoes and sausage to a large bowl. Add the celery and onion. Toss to mix.
In a small bowl, mix the mustard, lemon juice, salt and pepper. Pour over the salad. Chill for an hour, garnish with parsley, and serve.
