Ingredients -
2 cups green and black olives, in brine
¼ cup red wine vinegar
¼ cup olive oil
2 cloves garlic, finely chopped
1 fresh chili, finely chopped
zest of 1 lemon
1 Tablespoon fresh oregano, chopped (can substitute 1 teaspoon dried oregano)
1 Tablespoon capers (optional)
2 Tablespoons fresh lemon juice
Preparation:
Drain the olives. Place olives in a casserole dish or bowl that is heat proof.
Mix oil, vinegar, garlic, chili, oregano, capers, and lemon zest into a small pan and bring to a boil. Simmer for 5 minutes on low. Pour over the olives. Add the lemon juice.
Let the mixture cool, mixing everything occasionally. Let the olives marinate for 24 hours.
Serve at room temperature for the best flavor.
