Exotic Pastry Fruit Dessert Tarts

These delicious fruit cake pastries go down very nicely at a party and if you are looking for easy party appetizers, you will like these. Of course you can buy all kinds of exotic pastry fruit dessert cakes and tarts at a bakery but homemade fruit cake pastries are so much nicer. If you are in a rush, you can use readymade pastry cases instead of making the pastry yourself.

The fruity filling is delicious with the creamy mascarpone cheese and the sweetness of the powdered sugar. This is one of our summer appetizer recipes because fresh berries are very popular at that time of the year and these light, refreshing morsels are great in the springtime or summer. Feel free to change the berries. You can use strawberries if you like or a different kind of berry, depending what is in season and what is available.

Use fresh berries because thawed ones are a bit mushy and better suited to other recipes. Sweet snacks make delicious appetizers and some people actually prefer starting the meal with a sweet treat. Alternatively, these are nice after dinner too. If you are looking for fancy appetizer recipes, these pastry fruit dessert tarts are ideal.

Raspberry, Blueberry and Blackberry Tarts

Ingredients -

For the Pastry:

12 oz plain flour
4 oz confectioners' sugar
2 tablespoons water
1 egg yolk
¼ teaspoon salt
Grated zest of ½ lemon
6 oz unsalted butter, chopped
Raw rice or raw beans

For the Topping:

2 oz raspberries
2 oz blueberries
2 oz blackberries
¼ teaspoon vanilla extract
1 oz powdered sugar
4 oz mascarpone cheese
½ cup crème fraîche

Preparation:

Brush a thin layer of melted butter over a muffin tin and chill it in the refrigerator.

Combine the flour, lemon zest, salt, and confectioners' sugar in a bowl and rub the butter in with your hands until you have a breadcrumb like consistency.

Add the water and egg yolk and stir.

Knead the dough for a few seconds and shape it into a 2 inch thick disk.

Wrap it in plastic wrap and chill for half an hour in the refrigerator.

Roll the pastry out on a lightly floured board to 1/10 inch thick and cut 6 circles using the rim of a glass. Line the muffin tin by putting the circles inside and pressing them in.

Chill for half an hour.

Preheat the oven to 300 degrees F and line each pastry case with a circle of wax paper.

Fill it with beans or raw rice. Bake for 30 minutes or until the pastry cases are golden brown.

Remove the pastry cases from the tin and discard the rice or beans.

Whisk the crème fraiche, mascarpone, powdered sugar, and vanilla until thick, then spoon this mixture into the pastry cases and top with the berries.
