Cream Cheese and Amaretto Stuffed Apricot Appetizers

The following apricot and amaretto appetizers are a great example of how you can serve sweet tasting appetizers, followed by a savory meal. In this recipe, a mixture of cherries, cream cheese, almonds, and amaretto is used to stuff dried apricots. This is one of our most fancy appetizer recipes and they really do look stunning. People will expect such special looking appetizers to have an amazing flavor and they will not be disappointed.

This is a unique and unusual appetizer recipe and it tastes heavenly. Amaretto is an Italian almond liqueur, which features in more dessert recipes than appetizer recipes but is great with this dish nonetheless. These little stuffed apricots are attractive to look at and are great in small bowls around the room at a party. They will definitely get talked about anyway, once people start nibbling.

These easy party appetizers are best served chilled and eaten soon after being served, rather than sitting around and melting, so if you are making various buffet recipes, serve them early on, when your guests are hungry. This cold appetizer recipe is sure to be popular. You could even make them as spare appetizers, if you are not sure whether they will be needed in addition to the other easy party appetizers or not. Then, if not, you can serve them with the desserts instead.

Luscious Apricot and Amaretto Appetizers

Ingredients -

2 tablespoons amaretto liqueur
30 dried apricots
4 oz cream cheese, at room temperature
½ cup dried cherries
½ cup slivered, toasted almonds

Preparation:

Chop the cherries and almonds and combine them with the cream cheese and amaretto.

If you cannot find toasted, slivered almonds, you can put your own in an ovenproof pan then toast them for about 8 minutes at 350 degrees F, stirring now and then.

When they are golden brown, they are done.

Mix the cherries, amaretto, cream cheese, and toasted almonds well and transfer the mixture to a baggie.

Close the baggie and snip one corner off.

Slit open one side of each apricot with a sharp knife and pipe the cheese and amaretto mixture into them.

Put the stuffed apricot appetizers on a serving plate and cover with plastic wrap.

Chill for an hour, and then serve.
