Ingredients -
1 pound of cooked small or baby shrimp
3 small fresh tomatoes
1 can of yellow sweet corn
A small packet of pine nuts
2 lemons
Salt and pepper, to taste
Preparation:
To begin, chop the tomatoes into small cubes. The smaller the cubes, the better, as you will find that biting into a large chunk of relatively flavorless tomato will not be as pleasant as using the tomato to subtly enhance the flavor of the shrimp. Make sure to remove the seeds and pith at the core of the tomato, as that will only add unnecessary moisture to the appetizer.
Place the cubed tomatoes into a small mixing bowl, and add the shrimp to the bowl as well.
Open the can of sweet corn, and drain the liquid into the sink. You can place the corn in a strainer if you want to ensure that all of the liquid is drained thoroughly.
Add the sweet corn to the bowl with the tomatoes and shrimp, and squeeze the two lemons into the bowl. Add a pinch of salt and pepper each, and place the bowl in the fridge to sit for a few hours.
