2 cups of sushi rice
3 tablespoons of rice vinegar
2 tablespoons of granulated sugar

˝ pound of large shrimp
Preparation:
To begin, rinse the rice by placing it in a colander and running water over it. Keeping water running over the rice until the runoff is as clear as possible. This washes the starch from the rice, and makes it much easier to cook.
Place the rice in a pot of water, and fill the pot with slightly more water than rice. Leave the rice to soak in the water for half an hour.
Once 30 minutes has passed, turn the heat on underneath the rice and let the flame heat the water to a boil while you stir occasionally. As the pot of water begins to boil, cover the pot with a lid and let it sit for 8 to 10 minutes. Never lift the lid, as that will allow the steam to escape.
As the rice is cooking, heat the rice vinegar with the sugar and salt in a pot. Do not let it reach a boil.
Pull the rice from the pot with a wooden spoon to avoid damaging it, and place it in a wooden bowl. Mix the vinegar mixture in carefully, and let the rice sit until cool.
Once the rice is cool, roll it into small rectangular solids, add a dollop of wasabi, and top with a piece of shrimp.
