Shrimp Spring Rolls

Chinese food has always been some of the most popular of the party foods, particularly spring rolls. Spring rolls combine the delightful flavors of meat with vegetables and a soft or crunchy exterior shell that makes the appetizer the perfect finger food. If you can find the rice paper in the right Asian food stores, you will find that the spring roll recipe is much easier to make than if you had to make them from scratch. What better way to enjoy a summer evening party than by making some spring rolls that combine the delicious flavor of shrimp with the simplicity of Chinese food?

The following recipe for shrimp rolls calls for the shrimp to be tossed lightly in a skillet along with scallions, napa cabbage, mint, and basil. Shrimp Rolls

Ingredients -

1 pack of rice paper
½ pound of shrimp
1 napa cabbage
1 handful of chopped fresh basil
1 handful of chopped fresh mint
Soy sauce
Fish sauce
2 scallions
Salt and pepper, to taste

Preparation:

The first thing to do is to chop the shrimp into bite-sized pieces once they are peeled. Chop the napa cabbage and scallions, and toss all of the ingredients into a wok to stir fry for a minute or two. Do not let the ingredients cook for too long, but only until the shrimp is white.

Remove the shrimp from the fire, and place it into a mixing bowl. Add a splash of soy sauce and fish sauce, and mix in the basil and mint.

Take the rice paper and soak it in a plate of water until it is pliable, and fill the rolls one by one. The rice paper will take less than a minute to become pliable, and it can easily be filled with a small portion of the shrimp mixture.

Roll the rice paper into the proper shape, trim the end, and cut in half to be served with a spicy Chinese or Thai dipping sauce.
