Easy Guacamole Recipe with Tiger Prawns

If you are a fan of guacamole recipes, what about using guacamole to make shrimp appetizers, rather than serving it as a dip? Elegant Avocado and Prawn Appetizer

Ingredients -

2 ripe avocadoes
4 tablespoons heavy cream
1 tomato
2 tablespoons lime juice
6 cooked tiger prawns
3 diagonal slices cucumber, with skin on
Salt, to taste
Freshly ground black pepper, to taste

Preparation:

Peel the avocadoes, remove the stones and cut them in quarters.

Peel the tomato and remove the seeds. Peel the tiger prawns but leave the tails on.

Process the avocadoes in a blender or food processor until smooth.

Add the tomato, cream, lime juice, salt and pepper.

Pulse a few times to blend. Cut each slice of cucumber into 6 strips.

Divide the avocado puree between 6 serving glasses.

Top each one with the cucumber strips and a prawn.

Serve chilled.
