Cocktail Shrimp with Tangy Avocado Salsa Sauce

Ingredients -

1 pound of cocktail shrimp, peeled
1 large tomato
3 avocadoes
1 small onion
1 bottle of V8 tomato juice
2 tablespoons of ketchup
Salt and pepper, to taste

Preparation:

To begin, ensure that the cocktail shrimp are properly cooked. You can fry them in lime juice if they are not cooked, or you can buy them precooked.

Dice the tomatoes into small cubes, and place them in a bowl. Add half the bottle of V8 tomato juice and the tablespoons of ketchup, and mix thoroughly. Taste the cocktail, and add ketchup or tomato juice as desired. Finish with salt and pepper to bring out the tasty flavors of both.

Cut the avocadoes in half, remove the seed, and scoop out the meat carefully. Dice the avocado meat into small cubes, and add them to the tomato mix.

Dice the onions and add to the tomato, along with a handful of chopped fresh cilantro.

Add the cocktail shrimp to the mix and place in the refrigerator to chill.
