Shrimp and Avocado Appetizer

Shrimp is one of the best foods that you can serve at any party, as it adds an elegance and grace that simple chip and dip cannot come close to approximating. Shrimp is a simple seafood, and yet it is hard to describe how elegant shrimp makes simple dishes. Shrimp canapés, tacos, and cocktails are all so much classier than any simple dish, which is why most supermarkets have no problem raising the prices to make you pay through the nose to purchase even a single pound of the fresh seafood. Despite the high cost, it is well worth it in order to have an appetizer that will make your party that much more elegant.

The following appetizer is a simple one that calls for shrimp to be grilled lightly in a butter and lemon sauce, then served with a few leaves of lettuce and a couple of slices of avocado. Lightly grilling the shrimp after marinating them for a few hours is the perfect way to make your appetizer unique and delicious, and you will find that your friends and guests will instantly head for the slightly tangy and incredibly rich shrimp. The shrimp is served on a plate, lightly sprinkled with extra virgin olive oil, and fresh parsley is added to complete the taste.

One thing to keep in mind when making shrimp is that you will need to purchase it fresh on the day that you are going to serve it. Shrimp, like most seafood, will usually rot pretty quickly, and buying it even a day or two before you cook it can actually end up causing the shrimp to go bad. The high cost of the shrimp means that it is not cheaply replaced, which is why it is in your best interest to purchase the shrimp on the day that you are going to serve it.

Shrimp Avocado Delight

Ingredients -

1 pound of medium shrimp
3 avocadoes
1 head of Romaine lettuce
Mayonnaise
1 stick of butter
4 lemons
Fresh parsley
Extra virgin olive oil Salt and pepper, to taste

Preparation:

To begin, squeeze the lemons into a bowl. Add the shrimp to the bowl, and mix thoroughly to ensure that all of the shrimp are covered in lemon. Add a pinch of salt and pepper as desired, and place in the fridge to marinade for 3 hours.

Once the shrimp is thoroughly marinated, remove them from the fridge. Melt a stick of butter, and roll the shrimp around in the butter. Place on the grill to cook, and lightly grill until they are thoroughly cooked.

Cut the avocadoes in half, and use a spoon to gently scoop the flesh from the rind. With a sharp knife, carefully slice the avocados into small slices. Place the slices gently on a plate, along with three or four of the grilled shrimp.

Wash the romaine lettuce, and place a few leaves on the plate decoratively.

Add a scoop of mayonnaise to dip the shrimp in, and sprinkle the entire dish with fresh parsley. Add a swirl of olive oil for flavor, and sprinkle with salt.
