These delightfully indulgent bacon wrapped shrimp appetizers are a fantastic treat at any party. You can serve the jumbo shrimp and bacon by themselves but in the following shrimp & bacon appetizers recipe, we are dressing them up with some chipotle and lime juice to add another dimension to the flavor. You can either make these shrimp appetizers on the grill or in the oven depending which is the most convenient for you.
The results are equally great no matter which cooking method you decide to use for these easy party appetizers. You can use more chipotle powder for a spicier flavor or leave it as it is. If you are having an outdoor party or a summer garden party, these appetizers are very nice to do on the grill. They will also take on the distinctive smoky aroma of the grill if you are using a charcoal grill to cook them.
This is a nice appetizer to serve before a Mexican meal because it gives your guests a taste of things to come and the combination of Mexican flavors works so nicely. Alternatively, these are great bacon and shrimp appetizers at a buffet or dinner party, no matter what other foods are being served.
Ingredients -
6 strips bacon, cut in halves
12 large, raw shrimp, peeled and de-veined
Zest from 1 lime
¼ teaspoon chipotle powder
2 tablespoons olive oil
Juice from 1 lime
12 crostini
1 tablespoon chopped fresh parsley, for garnish
Fresh parsley, for garnish
Preparation:
Combine the lime zest and juice in a bowl with the olive oil, chipotle powder, and shrimp.
Spread the bacon over paper towels, cover with more paper towels and microwave on high until the bacon fat has started to melt but the bacon is still pliable. This will take about a minute and a half.
Preheat the oven to 450 degrees F or prepare the grill for a high, direct heat, depending on whether you want to bake or grill these easy party appetizers.
Wrap half a piece of bacon around each shrimp.
If you are grilling, thread the shrimp on to long skewers.
If you are baking, secure each bacon piece with a toothpick.
Put the bacon wrapped shrimp on a baking sheet and brush the rest of the lime chipotle mixture over them.
Bake for 10 to 14 minutes or grill for 5 to 7 minutes per side.
The bacon wrapped shrimp appetizers are ready when the bacon is crisp and the shrimp is pink.
Put one on each crostini and decorate the serving plate with chopped fresh parsley scattered over the appetizers and a sprig of fresh parsley on the side.
Serve immediately.
