Ingredients -
1 pound of large, fresh shrimp
4 fresh avocadoes, slightly green
1 large tomato
1 medium onion
2 medium fresh jalapenos
½ cup of fresh chopped cilantro
4 limes
Salt and pepper, to taste
Preparation:
The first thing to do is to remove the shell from the shrimp. Remove the shell, pull off the head, and remove the tail and legs.
Place the shrimp in a frying pan to cook for a few minutes, adding a drop of oil to ensure the shrimp fry properly. Squeeze 1 ½ limes into the pan to add flavor to the shrimp, and stir fry until completely cooked. Set in a bowl in the fridge to chill.
Dice the onions, tomatoes, and jalapenos. Carefully scoop the avocado meat from the shell, and carefully dice into cubes. Combine the ingredients in a bowl, add salt and pepper, and squeeze the rest of the limes into the mix. Stir gently to avoid breaking the avocado cubes, and finally mix in the cilantro. Set in the fridge to chill.
At party time, simply skewer the shrimp and serve in small bowls with a helping of the delicious avocado salsa sauce in the bottom.
