Rum and Mango Marinated Grilled Shrimp Kabobs

This exciting recipe really packs a flavor punch. Imagine the juiciness of hot grilled shrimp paired with a mango and rum marinade. The grilled shrimp kabobs also have grilled bell pepper and cherry tomatoes for added color and flavor. Grilled Shrimp Kabobs Mango Rum Recipe

Ingredients -

1 lb big shrimp, peeled and de-veined (leave the tails on)
½ green bell pepper, chopped
8 cherry tomatoes
4 fresh olive oil-soaked rosemary sprigs
3 finely chopped shallots
½ cup mango juice
3 tablespoons dark rum
1 cup olive oil
½ teaspoon dried thyme
½ teaspoon dried rosemary
¼ teaspoon Tabasco sauce
Juice from a lemon
¼ cup dark corn syrup or cane syrup

Preparation:

Thread the shrimp, bell pepper, and tomatoes on to the rosemary skewers.

Mix the shallots, mango juice, rum, olive oil, thyme, rosemary, Tabasco sauce, lemon juice, and corn syrup in a dish.

Marinate the shrimp kabobs in this mixture for 20 minutes.

Grill the shrimp kabobs over a direct heat until they are lightly charred.

This will only take a couple of minutes.

Let them finish cooking for another 6 minutes over a medium heat, then serve hot.
