Ingredients -
2 pounds jumbo shrimp
1 cup olive oil
½ cup fresh lemon juice
2 Tablespoons fresh marjoram, chopped
2 teaspoons lemon zest
2 teaspoons kosher salt, plus 1 teaspoon sea salt for seasoning
1 teaspoon ground black pepper
1 Tablespoon fresh parsley leaves, chopped
1 lemon, cut into 6 wedges
Preparation:
Cut through the backs of the shrimp with kitchen shears and remove the veins. Place the shrimp in a large casserole dish.
In a medium bowl, mix the olive oil, lemon juice, marjoram, lemon zest, salt and pepper. Combine well with a whisk. Drizzle the marinade over the shrimp. Cover the dish with plastic wrap and put in the refrigerator for up to 2 hours, turning the shrimp after the first hour.
Preheat the grill to a high temperature. Place the shrimp on the grill. Cook for 3-1/2 minutes, then turn them over and cook for another 2 to 3 minutes.
Remove the shrimp from the grill and serve on a large platter. Season the shrimp with sea salt and chopped parsley. Serve with lemon wedges.
