Ingredients -
10 long, thin slices zucchini
10 large shrimp, peeled and de-veined, tails left on
1 pack cream cheese, softened
1 teaspoon lemon juice
½ teaspoon black pepper
1 jar capelin roe
Daikon sprouts to garnish
Preparation:
Beat the cream cheese, lemon juice, and black pepper.
Bring a pan of water to the boil, and then turn it down to a slow simmer.
Cook the zucchini strips in this water, then immediately plunge it into ice water.
The zucchini will now be pliable enough to work with.
Put a shrimp and some lemon cream cheese on each zucchini strip and fold to enclose the shrimp and cream cheese mixture.
Decorate with capelin roe and a couple of daikon sprouts. Serve chilled.
