The following recipe calls for shrimp to be lightly fried in butter with garlic, onions, salt and pepper. Only fry the shrimp until it is adequately cooked, and then it is dipped in lime juice. The bottom of the cocktail glass is covered with thinly sliced lettuce and cabbage, and has an avocado slice placed on top. A spritz of lime juice is added to the avocado, along with a pinch of salt. The shrimp are added on top of the lettuce and tomatoes, and a wedge of lime is placed in the glass to complete the decorative look.

Ingredients -
1 pound of medium shrimp
1 dozen large limes
3 avocadoes
1 small onion
3 cloves of garlic
Salt and pepper, to taste
Lettuce
Cabbage
Preparation:
To begin, peel the shell from the shrimp and pull off the heads. Make sure to pull out the small vein in the back of the shrimp, as that is where the excrement is stored.
Dice the onions and garlic very finely, and place them in a skillet with olive oil to fry lightly. Once the garlic and onions are slightly toasted, add the shrimp to the skillet and stir fry quickly. Move the shrimp around quickly to ensure that they are well cooked without burning or toasting, and remove them quickly from the pan once they are cooked.
Squeeze 8 of the limes into a bowl, and dip each of the shrimp into the lime juice quickly. Sprinkle a bit of salt and pepper on the shrimp, and set them aside.
Slice the lettuce and the cabbage as thin as you can, and use them to create a bed on the bottom of a cocktail glass.
Cut the avocadoes in half, remove the seed, and scoop out the meat with a spoon. Cut each half of the avocadoes into thirds, and place two thirds in each cocktail glass on top of the lettuce and cabbage.
Add the shrimp on top of the avocado, pour some fresh lime juice on top, and add a slice of lime as the garnish for your cocktail. Serve chilled.
