Simple Cold Shrimp Appetizer

This cold shrimp appetizer is very simple to make. Zucchini strips are rolled into cones and stuffed with a lime-flavored cream cheese mixture, then topped with tomatoes and shrimp for a colorful appetizer. Easy party appetizers like this one are always great for buffets when you want to make easy party appetizers that can be made in advance. You can make this recipe really quickly and the shrimp rolls keep in the refrigerator under plastic wrap for a couple of hours. Do not drizzle the balsamic vinegar over them until just before serving though.

These easy cold shrimp appetizers are ideal before any entree and they are also good finger food for buffets. You can use lemon juice instead of lime juice if you prefer, or add a little Tabasco sauce to the cream cheese mixture to add a bit of a kick. Zucchini is a great ingredient for wrapping a filling inside. If you simmer thin strips for a bit, then plunge them into ice water, you will find that the strips are pliable so you can make cones, rings or whatever else you like. As the zucchini gets cold, the strips hold their shape. The cream cheese also helps to stick the zucchini together into the desired shape.

The balsamic vinegar adds a nice flavor to these shrimp appetizers, as well as a splash of color. Healthy Zucchini Shrimp Rolls Recipe

Ingredients -

10 long, thin zucchini slices
10 cherry tomatoes
10 cooked shrimp, de-veined and peeled
¼ teaspoon black pepper
1 teaspoon lime juice
12 oz softened cream cheese
Balsamic vinegar

Preparation:

Cook the strips of zucchini in simmering water for a couple of minutes, and then plunge it into a bowl of ice water to make it pliable.

Roll the strips into cone shapes.

As the zucchini cools down it will hold its shape, so work quickly.

Beat together the black pepper, lime juice and cream cheese and fill each zucchini cone with some of this.

Top with a cherry tomato and shrimp.

Drizzle a little balsamic vinegar over each appetizer and serve cold.
