Ingredients -
1 ¾ lbs medium shrimp, de-veined and peeled
1 tablespoon truffle oil
3 eggs
½ lb unsalted butter, chopped
½ teaspoon white pepper
2 ½ teaspoons salt
1 ½ teaspoons chopped fresh dill, for garnish
Preparation:
Blend all but 8 of the shrimp with the eggs in a food processor until the mixture is smooth.
Add the salt, pepper, truffle oil and butter and keep pulsing until the butter is mixed in.
Divide the shrimp mousse between 8 glasses using a spoon or a piping bag.
Top each one with a shrimp and a sprinkling of dill.
