This delicious recipe is so simple to make that you can do it in mere minutes. Throw it together whenever you have friends drop by or when you need a quick snack. This easy recipe only needs a few ingredients and you can easily substitute ingredients whenever you need to. For example, bacon can replace the shrimp if you run out to make a quick BLT appetizer. You could also use crab or lobster on top. The ranch dressing could be replaced with any thick dressing you like. For example, if you used 1000 Island dressing and put crab on top, these appetizers could be mini Crab Louis salads. Use spinach instead of the lettuce... you get the idea. Play around with the recipe and make the most of it.
Try to get vine ripened tomatoes if you can so you get the most flavor. Most grocery store tomatoes are picked while they are still green so they do not spoil before they get to the store. This creates tomatoes with very little flavor. If you can grow your own tomatoes or purchase them fresh from the farm, you will be rewarded with more tomato flavor than you have had in a long time. Heirloom tomatoes are excellent choices if you can find them. If you like pretty lettuce, use the curly edged leaf variety. If you prefer crunch, a nice leaf of butter lettuce will not let you down.
Serve these simple shrimp appetizers at parties, potlucks, for a quick lunch or for a snack in the late afternoon. You can whip them up so quickly, it may be handy to keep all the ingredients stocked so you always have a recipe you can put together fast.
