Deep Fried Thai Prawn Appetizer with Lychee Dipping Sauce

Ingredients -

10 ½ oz raw tiger prawns, peeled (leave the tails on)
2 teaspoons oyster sauce
2 teaspoons corn flour
1 egg white
10 canned lychees, drained and chopped
Few drops sesame oil
1 teaspoon sesame seeds
1 green onion, chopped
½ teaspoon white sugar
Pinch each of salt and black pepper
6 tablespoons sweet chili sauce
Vegetable oil, for deep frying
Lettuce and tomato slices, to serve

Preparation:

Combine the prawns, oyster sauce, green onion, sesame oil, and black pepper.

Combine the chili sauce, sesame seeds, and lychees for the dipping sauce.

Beat the egg white until it is stiff, and then fold in the sugar and salt.

Stir in the corn flour. Heat the oil in a deep fat fryer until it is hot.

Dip the tiger prawns into the egg white mixture and fry them for about 5 minutes or until they are golden brown and the batter is crispy.

Remove them from the hot oil using a slotted spoon and let them drain on kitchen paper.

Serve the hot battered tiger prawns with the lychee and chili dip and garnish the serving platter with the lettuce and tomato slices.
