Ingredients -
3 slices toasted country rye bread
1 ˝ tablespoons lime juice
˝ lb drained, canned cannelloni beans
20 capers
1 tablespoon finely chopped chives
1 tablespoons finely chopped dill
Small package sliced smoked salmon
Salt and black pepper, to taste
Preparation:
Cut 1 inch rounds out of the toasted bread with a cookie cutter.
You will need 20 rounds so if you are using a small loaf, use extra slices.
Process the lime juice and beans in a food processor until you have a smooth paste, then stir in the herbs and add salt and pepper to taste.
Top each toast round with some of this bean mixture, and then wrap a piece of smoked salmon around it.
Garnish each canapé with a caper and serve chilled.
