Ingredients -
1 cabbage
⅓ cup sugar
½ teaspoon lemon pepper
1 grated carrot
½ teaspoon seasoned salt
½ teaspoon mustard seed
½ cup vinegar
⅓ cup cold water
½ grated onion
½ grated green bell pepper
½ teaspoon celery seed
10 oz cooked shrimp
3 inches cucumber, in thin strips
5 fillets smoked trout
Caviar, to serve
Salt, to taste
Fresh parsley, for garnish
Preparation:
Add the water, vinegar, celery seed, sugar, lemon pepper, seasoned salt and mustard seed to a pan and bring the mixture to a boil.
Let it cool down.
Grate the cabbage and stir it with ¾ of the cooled liquid mixture.
Add the carrot, onion, cucumber and green bell pepper.
Season to taste. Spoon this mixture over a large serving platter and arrange the smoked trout fillets on top.
Add the cooked shrimp and caviar and ladle the rest of the cooled vinegar mixture over the top.
Garnish with parsley. Chill for an hour, under a layer of plastic wrap, and serve with a big spoon, so people can cut the trout fillets easily.
