Easy She Crab Soup Recipe with Whiskey

She crab soup is a southern favorite which is traditionally made with she crabs, but this easy version is made with imitation crab for a more economical, yet still delicious, alternative. How to Make Crab Soup

Ingredients -

2 pints chicken broth
⅓ cup whiskey
4 minced shallots
3 ½ tablespoons all purpose flour
¼ teaspoon cayenne pepper
1 cup milk
2 tablespoons olive oil
2 minced cloves garlic
12 imitation crab sticks
6 chives or green onion stalks
6 fresh cilantro leaves
Caviar or orange fish roe, for garnish
Salt and white pepper, to taste

Preparation:

Heat the oil in a soup pot over a moderate to high heat, then sauté the garlic and shallots until tender.

Cut the imitation crab sticks into long, thin strips and use the chives or green onion stalks to tie them together, like in the photo.

Add the chicken broth to the garlic and shallots and bring the soup to a boil.

Stir the flour and milk together, and then add this to the soup pot, stirring until the soup thickens.

Add the crab sticks and simmer for a few minutes.

Stir in the whiskey.

Add salt, white pepper and cayenne pepper to taste.

Divide the soup between 6 serving bowls and garnish with the caviar or orange fish roe and a cilantro leaf.

Serve hot.
