Ingredients -
6 big dry sea scallops
8 oz can sliced water chestnuts, drained
¼ cup soy sauce
1 tablespoon dark brown sugar
12 slices bacon, halved crosswise
1 ½ teaspoons minced fresh ginger
Daikon sprouts and halved cherry tomatoes, to serve
Preparation:
Preheat the oven to 450 degrees F with a foil lined broiler pan on a rack near the top.
Mix together the ginger, soy sauce and sugar.
Peel the muscle tabs from the scallop sides and discard them.
Cut each scallop into 4 and marinate them in the soy sauce mixture for 15 minutes.
Keep the marinade. Stack 2 water chestnut slices in the middle of each bacon piece, then a scallop on top.
Wrap the bacon over the top and use a toothpick to secure.
Repeat with the rest of the ingredients.
You might have water chestnuts left over.
Take the broiler pan out of the oven and arrange the bacon wrapped scallops so an exposed part of each scallop faces upward.
Drizzle the rest of the marinade over the scallops and bake then for about 15 minutes, turning them over after 10 minutes.
They are done when the scallops are cooked through and the bacon is browned around the edges.
Serve hot on a bed of daikon sprouts and cherry tomato halves.
