Crab Cakes with Mustard and Parsley

Ingredients -

2 beaten eggs
2 tablespoons chopped fresh parsley
½ cup fresh breadcrumbs
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
½ teaspoon dry mustard
1 lb cooked crabmeat, flaked
1 teaspoon lemon juice
Butter and oil, for frying
Extra breadcrumbs or Panko crumbs, for coating
Salt and pepper to taste
Lemon slices and lettuce, for garnish

Preparation:

Preheat the oven to 200 degrees F.

Combine the mustard, Worcestershire sauce, mayonnaise, eggs, and parsley, and then add the breadcrumbs and crab.

Season with salt and pepper and combine well.

Divide this mixture into 8 portions and flatten them into thick patties.

Coat each one lightly with breadcrumbs.

Chill for 30 minutes.

Heat some butter and oil in a skillet over a medium high heat and fry the crab cakes in batches for 4 minutes per side or until golden brown all over.

Drain them on paper towels, keeping the cooked crab cakes warm in an oven until they are all cooked.

Serve immediately on a bed of lettuce with lemon slices for garnish.
