Ingredients -
2 lbs crab legs
1 teaspoon garlic powder
3 beaten eggs
⅛ teaspoon cayenne pepper
1 sleeve saltine crackers
˝ cup butter
1 lemon, cut into wedges
Flour, for dredging
Preparation:
Crack the crab legs and take out the meat in whole pieces.
Crush the crackers using a rolling pin and freezer bag or a food processor.
You will need very fine pieces so a food processor is the best way.
Season the crab legs with the cayenne pepper and garlic powder.
Dredge the crab legs in the flour, and then dip them in the egg.
Finally coat the crab legs in the saltine cracker crumbs.
Heat the butter in a skillet over a moderate heat, then add the crab legs and fry them until they are golden brown all over, turning them a few times.
Drain them on paper towels and serve with the lemon wedges and your favorite dipping sauce.
