Crunchy Oven-Fried Fish Bites

Fancy appetizer recipes do not have to be elegant, but serving something which makes your guests' mouths water in anticipation is always a good idea, and these fancy fish bites are really tempting. Preheat the oven before you begin, so it is nice and hot when you put the fish in. If you prefer, you can shallow-fry these fish bites in oil until they are crisp and golden. The results are pretty much the same as oven-frying, so it is up to you. You might like to fry them if you are using the oven for something else.

You can use any kind of firm-fleshed white fish, like ling, silver dory, or hake. If you are using thawed fish then make sure it is very dry. Pat it all over with paper towels. If your fish is not dry, the egg and breadcrumbs will not stick and it will look patchy and messy when it is coated. Breaded Fish Goujons with Lemon and Parmesan

Ingredients -

Finely grated zest of 1 lemon
2 lightly beaten eggs
Salt and black pepper
1 cup dried breadcrumbs
½ cup finely grated parmesan cheese
½ cup all-purpose flour
2 lbs white fish filets
2 tablespoons finely chopped flat-leaf parsley
Lemon wedges, to serve

Preparation:

Preheat the oven to 350 degrees F.

Cut the fish into 1 inch thick fingers and toss to coat in flour.

Combine the cheese, breadcrumbs, zest, parsley, salt and pepper in a shallow dish and mix well.

Toss the fish in the egg, then in the breadcrumb mixture, using tongs to transfer it.

Press the fish firmly into the breadcrumbs so plenty sticks.

Arrange the fish in one layer on baking trays and bake for 15 minutes or until the fish is crispy and cooked through.

You can flip them once if you like, but this is not essential.

Serve hot with lemon wedges on the side.
