Ingredients -
4 whole cooked beetroots
Juice of ½ a lemon
1 teaspoon crushed cumin seeds
¼ teaspoon ground cayenne pepper
⅛ teaspoon salt
1 tablespoon chopped fresh cilantro
1 crushed clove garlic
4 pickled herring fillets
3 pickles, sliced lengthwise
½ head lettuce, to serve
Preparation:
Chop the beetroot into small cubes, and then stir it with the lemon juice, cumin seeds, cayenne, salt, cilantro and garlic in a glass bowl.
Chill for 1 hour.
Arrange lettuce leaves over a serving dish and spoon the beetroot salad over the top.
Finely chop the herring and arrange it on top of the beetroot salad.
Garnish the dish with the pickles and serve cold.
