Ingredients -
1 dozen sea scallops
1 dozen strips of bacon
Salt and pepper to taste
Seasonings (oregano, basil, thyme, lemon salt, garlic powder, etc)
2 tablespoons of butter
Preparation:
To begin, place the strips of bacon in the oven to cook at 350 degrees. Separate them into strips and place them on a sheet of greased cookie paper, and cook them for only a few minutes. Make sure the edges are golden but they are still fairly pliable.
Remove the bacon from the oven and set it aside to cool.
Roll the scallops around in the seasonings of your choice, adding salt and pepper to your taste. Once you have seasoned the scallops, roll the bacon around them.
Insert a skewer made from bamboo into the scallop rolls to hold the bacon in place, and put them on the grill to cook.
The cooking time will be about 7 minutes for the rolled scallop, and you will need to be certain to turn the scallop over repeatedly to ensure that it does not burn.
