Ingredients -
1 lb skinless, boneless chicken breasts
1 teaspoon ground ginger
1 teaspoon ground cumin
3 stalks chopped lemongrass
1 tablespoon ground turmeric
½ red onion, in 1 inch squares
½ cup soy sauce
2 chopped garlic cloves
1 tablespoon peanut oil
1 ½ teaspoons brown sugar
⅛ teaspoon salt
⅛ teaspoon black pepper
Preparation:
Chop the chicken into 1 inch cubes.
Stir the garlic, soy sauce, ginger, cumin, salt, pepper, peanut oil, brown sugar, turmeric and lemongrass together in a non-reactive bowl.
Remove 2 tablespoons of this marinade and keep in separate.
Stir the chicken into the marinade and leave it in the refrigerator overnight.
Soak 12 bamboo or wooden skewers in water for half an hour.
Preheat a grill to a high heat. Oil the grill grate lightly.
Take the chicken breasts out of the marinade and discard it.
Thread the chicken on to the skewers, alternating with the red onion pieces.
Grill the chicken kabobs, turning them often and using the reserved 2 tablespoons of marinade for basting.
The skewers will take about 6 minutes to cook and the chicken will be golden brown with crispy edges.
