You need to soak the dried plums overnight to make them more fleshy and give you a space for the stuffing, so start this easy appetizer recipe in plenty of time.
Stuffed plums are perhaps more unusual than other bacon-wrapped appetizers but you can probably imagine how the salty bacon tastes with the sweet, rich plums. The cream cheese, artichokes, lemon juice, celery, and the rest are used to fill the plums and this decadently creamy combination will make your guests close their eyes in delight while all the different flavors explode in their mouths. This is an amazing appetizer. You have to start it off a day before you serve it but the effort will more than pay off.
Ingredients -
6 slices bacon
12 pitted, dried plums
¼ teaspoon salt
¼ cup finely chopped celery
1 slice lemon
⅛ teaspoon cayenne pepper
1 ½ tablespoons lemon juice
3 oz cream cheese
2 cooked artichoke hearts, finely chopped
Preparation:
Soak the dried plums overnight with the slice of lemon, then drain and pat dry.
Mix together the cream cheese, celery, lemon juice, artichoke hearts, cayenne, and salt and stuff this mixture into the dried plums.
Cut the bacon slices in half and wrap a slice around each stuffed plum.
Fasten them with toothpicks and grill until the bacon is crisp.
This will take 4 or 5 minutes per side.
