Tasty Mini Tomato Tart Recipe

This mouthwatering Italian appetizer is so easy to put together and there is no cooking required. You can buy or make the tartlet shells, depending whether you want convenience or a homemade charm. Store-bought tartlet shells are usually fine, and all you need to do is fill them. Making your own is not difficult either. You can cut your own out from short crust pastry and bake the shells at 375 degrees F for fifteen minutes or until they are puffy and golden brown, or you can make the tartlet shells from scratch using your favorite pastry recipe.

The filling for these easy party appetizers is a combination of sweet tomatoes, crunchy bell pepper, and aromatic garlic and basil. A little mayonnaise in the bottom of each tartlet shell provides extra moisture, and a sprig of fresh basil finishes each tartlet off nicely. You can leave the tomato mixture in the refrigerator for up to several hours and the flavors will combine nicely.

Raw garlic does have quite a sharp flavor but stir everything together and let the mixture sit, and you will discover how wonderfully everything combines. Easy Tartlets with Tomato and Basil

Ingredients -

20 small readymade tartlet shells
8 chopped plum tomatoes
1 chopped yellow bell pepper
2 minced garlic cloves
1 tablespoon minced fresh basil
1 tablespoon extra-virgin olive oil
Salt and black pepper, to taste
¼ cup mayonnaise
20 sprigs basil, for garnish

Preparation:

Toss the tomatoes, bell pepper, garlic, minced basil, and extra-virgin olive oil together, with a pinch each of salt and black pepper.

Leave this mixture in the refrigerator for an hour or so, for the flavors to blend nicely.

Divide the mayonnaise between the tartlet shells.

Divide the tomato mixture between the tartlet shells, and garnish each one with a sprig of basil.
