This is an unusual appetizer. Perhaps you have marinated fish or meat before but not everyone knows how to make marinated mushrooms. Actually most people have never even considered marinating them! Mustard, vinegar, and onion form the basis of this tasty recipe for marinated mushrooms and you need to leave them marinating overnight in the refrigerator so all these flavors can sink in. Since they need to marinate for so long, this is certainly one of our make ahead appetizers.
You can serve marinated mushrooms as they are, with some crackers or on a bed of salad leaves. They are a good accompaniment to a salad platter and they are also good on top of a steak or as a baked potato filling. These marinated pickled mushrooms are really flavorful and the marinade really brings out the earthy mushroom flavor. If you are a mushroom fan, you are going to love the way the marinade gives the mushrooms such a good, strong flavor.
The pepper strips are optional but they do give this marinated mushrooms recipe some color. These appetizers taste piquant and earthy and you can vary the type of mushrooms to give different results, although small button mushrooms work just fine.
Ingredients -
1 onion
1 teaspoon ground mustard
1 teaspoon salt
⅓ cup white wine vinegar
⅓ cup canola oil
1 lb small, fresh mushrooms
4 oz red, yellow, and green bell pepper strips (optional)
Preparation:
Thinly slice the onion and put it in a pan over a medium heat with the mushrooms.
Pour the oil and vinegar over the top and add the salt and mustard.
Stir well.
For a more colorful dish, you might want to throw in a few red, green, and yellow bell pepper strips at this point.
Bring the marinated pickled mushrooms mixture to a boil and keep boiling for 6 minutes, stirring it once.
Take the pan off the heat and let the mixture cool down.
Transfer the marinated mushrooms to a bowl with a tight fitting lid and refrigerate it overnight.
