Easy Italian Stuffed Tomato Recipe

The lemon scented, creamy filling inside these stuffed tomatoes is really nice and the textures go together well also. You can use any kind of cress or daikon sprouts for the garnish. It just adds a splash of color to these otherwise red and white appetizers.

Italian Stuffed Tomatoes with Cream Cheese

Ingredients -

36 cherry tomatoes or 24 small tomatoes
4 tablespoons milk
2 teaspoons lemon juice
4 tablespoons daikon sprouts
16 oz softened cream cheese
2 tablespoons dry Italian salad dressing mix

Preparation:

Cut the top ⅓ off the tomatoes and reserve the tops.

Hollow out the inside, keeping the pulp and seeds for use in a future recipe or discard them.

Combine the cream cheese, dressing mixture, lemon juice, and milk in a bowl, then fill each hollowed out tomato with 1 teaspoon of the mixture.

Put the tops back on the tomatoes and poke the daikon sprouts into the cream cheese mixture visible between the top and base of the tomatoes as a garnish.

Serve chilled.
