With this Mexican appetizer recipe, you can vary the amount of chili powder if you like, to make it stronger or milder. Alternatively you can use finely chopped jalapenos or another kind of fresh chili, depending on what you prefer in your tortilla cheese wedge recipe and what you have available to use. You can top this tortilla cheese wedge with guacamole, sour cream, or salsa.

Tortilla Cheese Wedge Recipe with Chicken

Ingredients -

1 tablespoon canola oil
2 green onions
1 cup cooked chicken
2 teaspoons chili powder
¼ cup ranch dressing
4 tortillas, 10 inches across
1 cup Mexican cheese blend
½ teaspoon grated lime peel

Preparation:

Shred the cheese and slice the green onions thinly.

Chop the chicken and put it in a bowl with the lime peel, chili powder, and dressing.

Stir well, and then spread this mixture over one half of each tortilla.

Sprinkle the green onions and cheese over the top, fold the tortilla in half and press down on the edges to seal.

Coat both sides of each filled tortilla with the oil and cook in a skillet over a medium high heat.

Cook until the cheese has melted. This will take about 3 minutes.

Let the tortillas cool, and then cut them into 8 wedges.
