Baked Spinach Parcels with Walnuts

Ingredients -

5 ½ oz spinach
1 ½ oz butter
1 ¾ oz stilton or similar blue cheese
1 oz walnuts
6 sheets filo pastry, 10 inches squared

Preparation:

Preheat the oven to 400 degrees F.

Put the spinach in a pan with water and cook it for 2 minutes over a moderate heat.

When the spinach wilts, drain it and squeeze out all the liquid.

Chop it finely.

Cut the stilton or blue cheese into cubes, and then add it to the spinach in a bowl.

Add the walnuts and stir well.

Melt the butter and brush some of it over a sheet of filo.

Top it with another sheet of filo and repeat once more.

Do the same with the other 3 filo sheets.

Cut each filo pastry stack into 4 pieces so you have 8 small stacks of filo pastry altogether.

Divide the spinach mixture between each one and brush some melted butter around the edges.

Gather the pastry up and twist it to enclose the filling.

Put the spinach filo parcels on a baking tray and bake them for about 12 minutes or until they are golden brown.
