Easy Cheese Balls with Indian Green Chutney

This recipe for the chutney makes about a cup but you can make double the amount if you want, because it keeps in the refrigerator for up to a week. The cilantro and mint add a fresh flavor and the lemon juice keeps the herbs bright green. Leave out some or all of the chili in the green chutney if you want to make a milder dip.

Easy Cheesy Appetizers

Ingredients -

7 oz grated cheddar cheese
7 oz mashed potato
3 ½ oz yellow bell pepper, finely diced
5 oz cooked corn kernels
6 tablespoons fine breadcrumbs
1 teaspoon refined flour
½ teaspoon corn flour
2 teaspoons cilantro, finely chopped
2 teaspoons yellow split peas or garbanzo beans
Oil for frying
4 teaspoons refined flour
1 teaspoon white pepper
1 teaspoon corn flour
Salt, to taste
Water, as necessary

For the Indian Green Chutney:

1 cup chopped cilantro
1 tablespoons sugar
4 green chilies
Juice of a lemon
1 onion, sliced
2 cups chopped mint leaves
Salt, to taste

Preparation:

Mix together the Indian green chutney ingredients and grind the chutney to a smooth paste in a blender.

You might need to add a bit of water. Refrigerate the chutney until you are ready to serve it.

Mix the cheese, mashed potato, split peas, bell pepper and corn kernels. Add the salt, white pepper, ½ teaspoon of the corn flour, 1 teaspoon of the refined flour and the cilantro.

Mix well. Shape the mixture into ½ inch balls and set them aside.

Combine the rest of the refined flour and corn flour with enough water so it is thick.

Dip each cheese ball into this batter, and then roll in the breadcrumbs.

Heat the oil and deep fry the cheese balls. Serve then warm with the chutney for dipping.
